Vegan MoFo 18 – Day 19

Today’s prompt – Leftovers, day 2

I rarely have leftovers. I may batch cool and freeze some portions to take to work for lunch but I don’t really ever make a different meal from what’s left over so I had to purposefully cook extra for this meal.

Did you guess what I made?

It was the British classic of bubble and squeak!

I chopped up the remaining cabbage and sausages and mixed them up with the onions and mash and formed into patties. If I had had more time I would have put them in the fridge for half an hour before frying.

You could serve these with more vegetables but I just had them as is for lunch.

Vegan MoFo 18 – Day 18

Today’s prompt – Leftovers, day 1

Today’s meal is made with the aim of making a second meal with the leftovers.

I decided to make sausage and mash for meal one. When I was planning my Vegan MoFo meals in advance I thought by the middle of September it would be feeling positively Autumnal, however today it has been a sweltering 25°C! This meal was still delicious but I did have to open a lot of windows while cooking!

I baked the sausages in the oven with large mushrooms, boiled the potatoes with the steamer on top for the cabbage and fried some red onion. I passed the potatoes through a ricer to make them extra smooth and added some vegan margarine and some oat cream in the mix. In the UK red Bisto is vegan friendly so I made up some gravy to finish the dish
