This banana bread recipe (which I have used before) covers both these prompts along with being oil and soya free. (It can also be nut free of you leave them out).
I love a good banana bread and have been making it (initially with my Mum) since I was very small.
When I first saw this recipe I was a bit dubious, how could it be as tasty as the other banana breads I had made when it didn’t contain so many of the good bits!
Well it definitely manages it! This is now my go to banana bread and I do feel very virtuous eating it! The sugar element is provided by the (very) ripe bananas themselves and dates. You definitely don’t miss the fat not having any oil or vegan margarine and the oat flour works just as well as any gluten containing one.
