Today’s prompt – Fancy but frugal
Today I made a lovely fancy but frugal brunch for myself of homemade houmous stuffed aubergine.
I pricked the aubergine with a fork and placed it in the oven straight onto the shelf for 30 minutes at 180°C and made my houmous in the food processor.
I used a tin of chickpeas (garbanzo beans), garlic powder, tahini, salt, lemon juice, liquid smoke and a little of the the left over chickpea water (aquafaba) from the tin in place of oil.
I don’t follow any amounts I just put in everything and then taste and add a little more of something if it needs ramping up a bit. After that I cut the aubergine in half add the houmous and a little smoked paprika on too and enjoy!

That’s quite pretty! I don’t know how fancy my budget meals are, really. I like to make lentil soup when I have time, or some Cuban black beans and rice. I don’t often make my own hummus, but I’m trying to be more disciplined about that. Buying hummus at the store is too expensive for what it is, and I usually don’t end up eating the whole tub before it goes bad.
In season, a good corn and tomato salad goes a long way, too.

Homemade houmous is the best! So much more tasty and I like that I can flavour it how I want and not put too much oil in it. I’ll check out your recipe, I love black beans!

Sounds yummy. I’ve never stuffed a veggie with all hummus, sounds like my son would love it.
