Today’s prompt – Free From Day
I decide to make a low FODMAP meal as I’d never made one before. I did a quick internet search and found this list of vegan low FODMAP recipes from the Metro.
I chose the satay noodles.
The sauce was very peanutty but I think it could have used more soy sauce and lime. It was also a bit annoying that it required half a tin of coconut milk so now I have half a tin to find a use for.
I may make this again with some tweaks.

Very occasionally, I used to just mix unused coconut milk with pineapple juice for a virgin pina colada but I seem to be sensitive to pineapple these days. I’ll bookmark the Baileys recipe for Christmas!

You can freeze coconut milk – I have done this in the past when only using half a tin
