Today’s prompt – Creamy without nuts
I don’t often use nuts to make things creamy, I’m not really into mac and cheese so I found this quite easy.
I used avocado to make this pasta sauce recipe, the only changes I made was that I added less oil than stated as a third of a cup sounded too much to me.
This is the smallest stone I have ever found in an avocado I cut right through it!
I used red onion, roasted tomatoes, olives and sweetcorn to go with the pasta made with green pea flour (hence why it just looks like a big bowl of guacamole!)
I use avocado quite a lot in dishes like this so it will definitely be something I do again.

I love the sound of your pasta dish. I tend to add cashews to soups to make them creamy. My favourite mac and cheese recipe is from the Oh She Glows blog and doesn’t have nuts. It uses roasted butternut squash blended with nooch, onion powder and garlic powder. It is a good one to give to non-vegans. A friend once even asked to hold off dessert for a while as she said she didn’t want the taste to leave her mouth just yet, haha!

I’m a mac and cheese addict and try every recipe I come across – I love all the ones made with nuts, and hate all the ones made with veg! I just think they’re very duplicitous, trying to trick me into eating vegetables when all I want is pasta and cheese! Avocado is definitely a winning idea for a creamy pasta sauce, it looks delicious. And congratulations on finding the perfect avo!
