Today’s prompt – Leader of a country, place or group

I chose Kerry McCarthy who is an MP in Bristol. She was the first vegan MP and has managed to convert a couple more in the British parliament. I recently heard Kerry speak at the Vegan Camp Out which I wrote about here and have been an admirer of her for a while.

Kerry has been involved in work to do with food waste so I decided to use this to inspire this dish.

Bagged salad is the most thrown away food from British homes with 178m bags being thrown away according to Wrap.

One thing that some people aren’t aware of is that salad is great cooked too! I served lettuce cooked with spring onions and peas along with roasted new potatoes and Burmese tofu (made with chickpea flour using this recipe).

  1. The chick pea tofu sounds really interesting. I’ve not heard of that before. I’ve recently got into juicing. i don’t have a juicer but I have got a high speed blender so I wish any leftover veg up in that including bagged salad leaves and then squeeze it through a nut mylk bag. It makes great juice!

  2. Burmese tofu sounds delicious! My boyfriend mostly tries to reduce waste in our house by showing complete disregard for best-by dates. I try to obsessively meal plan, and buy on the day I’m shopping so that we don’t produce too much waste anyway.

My biggest trick to reduce food waste is being aware of how much makes up a portion when I’m cooking things like pasta and rice which don’t last so well once cooked (I particularly won’t eat rice unless it’s been freshly cooked ever since I got a very nasty bout of food poisoning from reheated rice a few years back). Whether I weigh it, measure it by volume or use a device such as a spaghetti portion measurer, I try to make sure that I always prepare the correct amount for the number of people eating.
